As previously mentioned, the Depressed Cake Shop is trying to find a recipe for a baked desert that will work for me that can be colored grey. The recipe that they thought would work turned out to not work, so we are on a hunt for a recipe. We have a volunteer baker who will just bake stuff for me if we find a recipe. I want to give her a few days for ingredient acquisition and experimentation prior to the real baking. So here are the requirements:

  • No gluten
  • No potato (including potato starch and potato flour)
  • No dairy
  • No apples (including applesauce, apple cider vinegar)
  • No beet sugar
  • No macadamia nut
  • No coconut
  • Little to no cinnamon
  • Individually cooked servings (since this is for a bake sale)
  • Can be colored grey or iced with grey icing
  • Fresh fruit will be questionable, as I am allergic to many fruits

Substitutions that I have been asked about that work for me (will update with additional substitution questions):

  • Peanut butter (I’m also not allergic to dust mites, because me.)
  • Earth Balance

For those accustomed to baking for dietary requirements, you’ll see the problem. Potato starch is used to texturize many gluten-free baked goods, so standard gluten free doesn’t necessarily work. For no dairy, you could look at vegan, but vegan baked goods tend to use applesauce as a replacement for butter, so standard vegan doesn’t work

I have about 70 food allergies so obviously, this is a focused list.

ETA: The Vanilla Gluten Freedom Cupcake recipe from Vegan Cupcakes Take Over the World will work and the volunteer is in charge of vegan cupcakes anyway, so she doesn't even have to put herself out much to accommodate me! The butterless buttercream frosting recipe that she was already making is also me-safe, so we are all set! Thanks for the help everyone!
