So, I’m on a grilled cheese kick the last few days. My younger kids, with their food sensitivities, rarely get common “kid foods” like, chicken nuggets, burgers, pizza, and grilled cheese, because, well, gluten and dairy are generally huge components of these things.

I made gluten free bread last night (Bob’s Red Mill Gluten Free Homemade Wonderful Bread Mix. I use whole eggs, add 3 TBS ground flax, and 3 TBS quick oats to the mix to give it a little more body) in my breadmaker. They got PB&J’s for breakfast, and I made grilled cheeses with bacon for them for dinner tonight!

I used mayo instead of butter (it’s dairy free and much easier to spread than margarine, since the bread is a little delicate), goat’s milk Monterey Jack cheese, and bacon from the pound of “ends ‘n’ pieces” I keep on hand. They were absolutely inhaled, they were gone so fast!

I also made barbeque beef liver, with homemade BBQ sauce, which was quite tasty, and I’m not even a big fan of liver.
