Except I didn’t really have “dinner”, there was just a series of snacks (slice of bread, cup of boullion, half a caramel apple pecan strudel that was hiding in the freezer, 2 peanut butter balls) and now I’m super full. I’ve been on a roll this week, cooking-wise. It finally cooled down enough to actually cook in my appallingly hot and stuffy kitchen.
The last few days, we’ve had homemade pizzas, chili nachos, pancakes, no-bake peanut butter balls, and turkey veggie soup. All from scratch (well, lots of canned goods but hey, I combined them!) All GF/DF, too.
The pizzas were an exercise in ingenuity, because people had apparently eaten most of the things I wanted to put on them, but I found a couple kinds of cheese, green olives, pickled jalapenos, and pepperoni, canned mushrooms, and a fresh tomato from the neighbour’s garden. Chopped everything up, dumped cheese on it, and they were delicious! I used jarred pizza sauce and whole wheat crusts for us, and gluten free pre-baked crusts for the Smacklets.
The chili nachos are an old standby... just cans of pink, black, and refried beans, a pound of hamburger, an onion, a can of tomatoes, a jar of salsa, a ton of spices and seasonings, and mashed potato flakes to thicken it because I was in a hurry. dump a big spoonful on top of a couple handfuls of tortilla chips, add shredded cheese (goat’s milk mild cheddar), and some salsa and plain yogurt.
The soup was just using up odds and ends of veggies... carrots, potatoes, half a zucchini, a couple of mushrooms, an onion, a clove of elephant garlic, a jalapeno, half a can of spinach, a can of white beans, and some of those turkey Italian sausages from the food pantry last week, simmered in turkey stock I made last week.
Peanut butter balls are kind of a catchall recipe. I use whatever GF cereal we have (today it was Crunchy Rice cereal from Aldi), and any of these: quick oats, ground flax, shredded coconut, dried fruit, quinoa flakes, honey, maple syrup, cinnamon or apple pie spice, and (naturally) peanut butter (which was Peter Pan crunchy pb this time).Roll into balls and let ‘em set in the fridge for a bit.
