UpdAte, a day late (sorry chianti took over :-p): I cooked the damn meat the way I regularly would, browning it, then taking it out while I sautéed the veggies, and put it back in to simmer. We did not die, will let you know if we do. Also, I used pasillo chiles and will NEVER make chili without them again. Holy Jesus they are delicious. 10/10 would reccomend. Thank you wonderful smart folks of GT, would not know what to do without your wealth of knowledge.

so emergency might be an overstatement but here goes:

I took a zip locked bag of about a half pound of ground beef out of the freezer and tried to thaw it in the microwave by doing three minutes on defrost. At least I think that’s what I did. When it was done, it was very hot and cooked/brown looking. I put it right into the fridge.

Can I use it in chili tonight? I would brown it/cook it on the stove top. Will we die? ?? Save me from myself, oh smart ones. Thank you!
