Or maybe it’s more like Chopped. Regardless, I’ve got a bunch of ripe avocados. I also have an absurd amount of brown rice. (The result of a bulk store being the only place I can get grocery orders lately.) We just finished several days worth of Mexican-ish rice and beans, so I don’t really feel like making more rice and beans with guacamole or something like that.

I’m thinking like a rice bowl of sorts. I have a good easy peanut sauce recipe, and I could roast carrots which would go well with that, but I feel like maybe that’s weird with avocado? I debate doing that deconstructed sushi type thing that Violet posted, but I’m not sure it’ll be filling enough with just sushi rice, avocado, and Sriracha mayo...

Update: I made the sushi bowl and it was tasty! I mixed some seasoned rice vinegar and soy sauce in with the rice, topped with roasted seaweed, avocado, shredded (somewhat pickled) carrots, and sriracha mayo. Bearddamnheroes was very happy because he said he’s been craving sushi. Thanks for everyone’s ideas, I still have more over-ripe avocados so I’ll be using this inspiration again tomorrow. And I would love if there was a Chopped-like open thread in the future; it’d be fun!

Update2: Thanks to such a travesty for the avocado pasta sauce suggestion. I wouldn’t have thought of that and did that tonight with the rest of my overripe avocados. Blended them with lemon juice, basil, garlic, parmesan, and olive oil. Very tasty.
