Hivemind! What can I cook/ferment/decoct with rose petals?

So this cabbage rose produces truly massive amounts of flowers, each with truly massive amounts of petals. And I figure I should probably eat them, because why not. I've already eaten the dandelions, I can't exactly act like I'm picky.

It's a fantastic plant, really; the original plant was my great-great grandmother's, so it's really an old garden rose. The flowers both look and smell super-garish (in a good way) and it's completely impossible to kill. Real horrific thorns, though. Go right through gloves. Basically, it's a rose that makes no apologies for being a rose.


But back on topic, does anyone have recommendations of what edibles or potables could be made with the petals?
