I am easily overwhelmed and when I don’t have a plan at the market I just buy a bunch-o-random shit that looks good. This is how I ended up with two ears of corn and thought to myself...can you cook corn in the oven?
Turns out, you can! And it’s like WAY FUCKING BETTER than boiling it (which is what my parents always did). Not better than grilling, obviously, because nothing is better than grilling. But, you just have to toss the husks in and cook them for a bit and voila, cooked al dente-ish corn.
Now I am baking mushrooms stuffed with arugula, spinach and leeks and then imma make buttery cilantro rice. What are you guys cooking this Sunday??
