I did it! I cooked something healthy and it was good!

And I even ate the leftovers!

So, last night I dragged my only lamp into the kitchen (don't ask) and made spinach tomato + veggies! pasta.


I got the idea from here: http://www.webmd.com/food-recipes/s… but basically added different veggies and more garlic. Two fresh tomatoes chopped up, an entire package of fresh baby spinach, a handful of baby carrots and some fresh mushrooms. Just cooked it all up in some olive oil and garlic, and then tossed in the pasta. I tried to limit the parmesan so I didn't use a whole 1/4 cup. It was yummy, probably because I used a lot of garlic. I didn't add salt or anything else. Next time I might add zucchini or squash if I can get it at the farmer's market.

I am so proud of myself! It took maybe 10 minutes to make. So, I'm looking for more recipes or ideas that are EASY and healthy. When I say easy, I mean, cook in one pan, takes less than 20 minutes of active prep, etc. I have a small convection oven. I have an 8" x 8" Pyrex pan that fits in there perfectly, and just bought a 9" x 13" nonstick pan that fits a little snug but seems usable. I have plenty of pots and pans for the stove, but only 2 burners (hence, one pan cooking if at all possible).

The only things I won't eat are onions and yogurt. What do you suggest Jezzies?
