My problem comes from the recipe calling for 3 lbs of bone in chicken and, since I am not buying a whole chicken for reasons, I use a mix or thighs and split breasts. Of course the store packages them in 2+ lb packages each. And if I put some in the freezer for another time it will get burnt before I use/remember it.

If you like Chicken Adobo here is the slow cooker recipe I use. It is pretty darn good for such an easy dish

3 lbs bone in chicken

8 cloves of garlic, crushed

3/4 cup soy sauce

1/2 cup vinegar

1 small sweet onion, chopped

put chicken in slow cooker. mix remaining ingredients in bowl and pour over chicken. cook on low 6 to 8 hours. after cooking, remove chicken and remove bones and skin and put back in broth. eat on plain white or brown rice.
