So, my idea is this:
I give you a list of random stuff in my fridge, and you tell me what you would do with it. Kind of a written version of Chopped. Use at least 3 of the items, and add whatever other stuff (herbs/spices/etc.) needed to create a meal. I'll update with what I actually made after awhile.
1/2 can apricot halves in light syrup
1/3 small can hot chipotle salsa
1/3 can whole black olives
1/2 tiny can of green chiles
1 pound turkey breakfast sausage
1/2 of a sweet onion
handful of cherry tomatoes
1 cup leftover baked beans
Update: Ok, so when I posted this, I had already made dinner, I was just curious to see what the rest of y'all could come up with for these somewhat random items. You guys are really creative!
Sausage Meatballs with Sweet and Spicy Sauce and Yellow Rice
I took the apricots with syrup, the green chilies, a spoonful of the chipotle salsa (it's REALLY spicy), 1/2 teaspoonful of dried tarragon, a dash of cayenne, and a few drops of Worcestershire sauce and tossed that all in the blender. Pureed it and set it aside.
Took the sausage, the eggs, minced a bit of the onion, and added about 2/3 cup of mashed potato flakes, and smooshed them all together. Made 14 meatballs (7 people, 2 meatballs each), placed them in a greased 13x9 pan, and poured the apricot sauce over and around them. Covered the tray tightly with foil and put in a 350F oven for about 35 minutes.
While those were cooking, I tossed 3 cups of Cal-Rose rice, 4 cups of water, 2 tbs olive oil, a bit of cayenne, and a tbs of turmeric into the rice cooker.
Each bowl was about 3/4 cup yellow rice with 2 meatballs and a couple spoonfuls of sauce. It was super pretty with the bright yellow rice and the orangey sauce. Figures my phone is busted so I couldn't post a picture of one of the prettiest things I've made it awhile!
