4 cups all purpose unbleached white flour
1 packet instant dry yeast, or 1 1/2 tbsp instant dry yeast
1 tbsp salt
1 tsp sugar
2 tbsps olive oil
1 1/2 C HOT water, like 110 degrees—-just shy of Japanese hottub hot
Blend dry ingredients, add oil, then begin to slowly add water. Watch the dough begin to form, if it forms a cohesive ball, you have a good mix of both wet and dry ingredients. If it is too crumbly, add more water, too wet, add more flour—slowly and in small amounts. The dough should pull neatly away from the bowl, while still maintaining a springiness. Now, remove the ball of dough from the bowl and add about 1 tsp olive oil to the bowl. Coat the inside of the bowl with oil and place the ball of dough in the bowl to rise for 1 hour. Once risen, punch down and roll out with a pin. Will make 2 14" pizzas or 1 big ass pie.
What ever you want. Put the greasiest toppings on first. Do not layer wet ingredients upon each other. I love feta cheese, mushrooms, peperoncinis, red bell peppers, and provolone cheese.
As to Tuesday inebriation? Meh. No one (read husband) wants to be drunk with me because he has things to do. Me? I just have to sit at home right now and make sure the children don't kill themselves, each other, or me.
