Kastle's Lazy Fancy Shrimp, just in time for NYE

Lazy, Fancy Shrimp (Base Recipe)

The recipe is about 1/4 the length of the notes that follow. Make it your way.

Per person:

1/4 white wine

4-6 jumbo shrimp raw and peeled

1/2 cup cream

An ounce or more Parmesan, Romano or Asiago cheese, freshly grated

Freshly ground black pepper

In a small sauce pan, bring the wine to a boil. Add shrimp and turn down heat to a simmer for about 2 minutes. Add cream, and grated cheese. When thickened, serve on unbuttered toast or pasta with some fresh black pepper. Done!



Notes: I call this a base recipe because, while it is fabulous as is, it can also serve as the base you personalize in hundreds of ways.

Add garlic while the wine comes to a boil.

Ditto a sprig of herb such as tarragon or thyme (remove before serving)

Add any variety of

sautéed mushrooms

Or spinach,

green beans,

sundried tomatoes,


marinated artichokes etc.

If you have fresh herbs, garnish with chopped basil.

Or chives.

Or green onions.

Switch it up with scallops,

or lobster

or crab meat.

Make a non-seafood version by making the sauce and stirring in cooked chicken.

Make it vegetarian by making just the sauce and mushrooms.

Add toasted almonds.

Or pine nuts.

Or cashews.

Add an ounce or so of julienned prosciutto

or pancetta.

Or thick smoky bacon

or ham.

Leave off the black pepper for smoked paprika garnish.

Kick it up with a dash of pepper sauce.

Or horseradish.

Or serve it on rice, barley or bulgar
