So this afternoon I was making a Potato and Asparagus tart for dinner, when I made a little mistake:

The recipe calls for 8 oz of heavy cream, mixed with 3 eggs. I wasn't thinking, and dumped the whole carton of cream into the eggs. As I was mixing them, it seemed too creamy and not eggy enough, and it dawned on me that I accidentally added 16 oz of cream (in my defence, our packaging does not list how many oz. only how many ml).

So I took about half of the mixture, added some more egg, and used it in my recipe. Question is, what do I do with 8 oz of heavy cream with a little bit of egg in it? French toast springs to mind, but that would make a whole lotta French toast.

Any ideas? I hate to just toss it.
