So I've had a couple of sick days, and I've invented the laziest dish every - the anything omelette. Kind of like the everything burrito:
I thought you guys might like the recipe - if you can call something that has infinitely variable ingredients a 'recipe'. The anything omelette is anything you like/have in the fridge, and then you just chuck it in a pan, and add an egg to kind of bind it together. I think egg and onion are probably the only things that are a constant - though really you don't even need the onion, I just love onion in any savoury dish.
So far I've done caremalised onions, mushrooms, capsicum, spinach and those tiny sweet tomatoes. And another one with caremalised onions, eggplant, mushrooms, tiny tomatoes, and bocconcini, which is my favourite food in the world. I chucked some bocconcini water into the whisked egg, which I thought was genius.

It was so delicious! The bocconcini was a big melty mouth orgasm.
