So I was thinking about food and what I was craving, and I thought about one of my favorite Persian foods, a particular lentil-based rice called adas polo (adas = lentil, polo = rice). I thought I'd share this with you guys because um, we know how much everyone here loves lentils! It's seriously something that's so simple to make yet delicious and very vegetarian-friendly, too. It's just a combination of lentils with rice, spices such as cinnamon, turmeric, and saffron (but saffron isn't necessary—only if you want to go fancy or during special occasions), raisins or barberries, dates, and sometimes it's topped with caramelized onions, sauteed orange zest, and pistachio slivers.

You can also eat it with chicken, beef, etc. My favorite way to eat it is with a fried egg.
