What’s for breakfast, y’all?

Have you guys ever tried mujadara? It’s one of my favorite lentil dishes. A friend of mine, who’s Lebanese-American, made it for me many years ago and I’ve been obsessed ever since.

It’s pretty dang simple and falls into the “happens to be vegan” category, if you care about that.

Also? When you reheat the leftovers, a couple of fried eggs with some cheese thrown on top makes a great (though obviously, no longer vegan) breakfast! Yum!

I’m noshing on some of this right now. How about you?
