So curry is a great sauce either with a paste or powder base and it’s taste is very regional. There is green, red, and yellow and I think the most common curries are Indian (not sure regionally within India though) and Jamaican. I’m lucky to be in big city so I have access to those two plus Thai, Guyanese, Vietnamese, and South (?) African. A few others too but I’m not sure what areas. Regardless my fave is Trindadian yellow curry and roti’s.
