Meal Prep on Steroids

Ugh. I start classes next weekend, so the next few of months are going to SUCK with having one less day to get shit done. (1st class is 9-5:30 every Saturday, 2nd one starting a week after the first finishes, is online for 8 weeks.)

Between work, workouts, political activism, and now classes, I don’t want to fall off the healthy eating train, so this weekend was some serious cooking. It took some creative packaging to get it all crammed into a regular size freezer, but I now have four weeks worth of meals and snacks ready to go. These are supplemented with fresh vegetables and yogurt, but essentially no cooking for a month! Fortunately I don’t mind eating the same thing over and over, otherwise this would never work.
