My friend sent me this Broccoli and Cheese recipe a while back as a Mac and Cheese replacement. We’ve both been trying keto, but I think we both like cheese too much to actually lose a lot of weight. (I’m down a little, but my asthma has improved so much, I will probably stay pretty low carb no matter what.) I immediately started tweaking it. First I added cauliflower because I don’t really like broccoli but I’ll eat it because it’s good for me. I tried steaming a mix of broccoli and cauliflower in the IP instead of boiling. But I think I have it right now.

Tonight I cut up a medium crown of broccoli and small head of cauliflower. I spread the small pieces across a medium pan, sprinkled with salt, pepper, and garlic powder and roasted at 400 degrees for 20 minutes, until it was just starting to brown.

While the veggies were roasting I mixed a package and a half of cream cheese with a handful of cheddar and about 3/4 cup roasted hatch chili peppers. I also sprinkled in some more garlic powder. I used the microwave to heat so that everything mixed together well.

When I pulled out the out the veggies, I dropped the over temp to 350. I dropped the veggies into a glass baking pan and mixed in the cheese. I put it back in the oven while I was cooking other things. When the rest of dinner was almost done, I threw some more cheddar and Parmesan on top and let it melt before pulling it out.

The texture is great and I love the chilli peppers.
