What I did:

Asked everybody about mustard seed, dry roasted it and ground it, and tasted it and was like bleeeech.

Fried pre-marinated tilapia pieces in canola oil, set aside.

Added that oil and a bit more to wok, dumped in 1.5 tsp coriander powder, 2 tsp turmeric, a handful of julienned ginger, and 2 largely deseeded chillies. Accidentally smoked it.

Dumped in two diced tomatoes, let it burble into a paste. Tasted it and quickly decided it must have water or I will die. Added 1/2 chopped red onion, 1/2 chopped yellow onion. Realized that red onions taste better, and it was a terrible mistake to buy yellow onions. Saute until mostly cooked through. Fold around fish.

Add water. Let simmer. Taste. Still burns. Add a weensy bit of sugar and a couple teaspoons of lemon juice (I learned this from an Indian restaurant that later went out of business, but it is amazing). Add some salt.

What I should have done:
