And this is happening tonight (except I'll fry my fish, because yum). Or maybe right now. Because even though I'm Texan and we can occasionally be all weird about Tex-Mex and such (ask a Texan about Tex-Mex open thread? I think yes!), fish tacos are the absolute damn best thing you can do with tilapia.
*Damn Mike Rowe for pointing out how tilapia is farmed. They are apparently on the bottom rung of bottom feeders, but I give no damns. They're white and mild and occasionally 2.99 a lb.
