I know lots of people are doing more complicated cooking because they’re home and have time or just are exploring new recipes, etc.

I am not that person. I still prefer cooking which is fairly hard to screw up and doesn’t require a lot of active time that I have to pay attention to.

So, let’s do a recipe roundup for things which are our go-tos for that whole “fuck it, I don’t want to work hard but I still want to cook something.” Bonus points for things that don’t require a fuck ton of ingredients and are not persnickety to modifications.

I’ll start - espinacas con garbanzos (spinach with chickpeas). Works as a side dish or a vegan main course. Less than thirty minutes unless you decide to use dried chickpeas instead of canned.

Ingredients:

1 can of chickpeas (or you can cook your own from dried chickpeas)

1 bag of raw spinach or frozen spinach, will be better with fresh. You could probably sub any other greens you wanted here.

1 small onion or a few shallots

smoked sweet paprika,cumin, salt, pepper

olive oil

Drain and rinse your chickpeas and chop the onion/shallot. Cook the onions/shallot in a big pan with the olive oil and when they are translucent dump in the chickpeas and all your seasonings. Cook all that for a few minutes, mash a little with the spatula/spoon. Add the fresh spinach and cook a few minutes more. You’re done!
