I had lunch at a nice Japanese restaurant on Friday and would love to be able to recreate the salmon special I had. It was buttermilk fried and sat on a bed of miso sauce. It was dipped in tempura batter. I am in love with this recipe and the salmon I’m having tonight pales in comparison. I’d rather bake it instead, for health reasons. Is it really as simple as soaking the salmon in some buttermilk, drying it off, dipping it in batter, and baking it? The sauce was miso, but I’m not sure what else. I’m not confident about creating recipes and when the internet fails to tell me what to do, I don’t do it.
