Since I'm going to work late today, I thought I'd take this opportunity to make this lovely mock cassoulet. I even fancied it up by soaking the artisanal beans with aromatics, making a mirepoix first, using fresh herbs, etc. Then I dumped everything in the oven, forgetting that it needed to cook 40 minutes before putting the beans in.

Picking beans out while leaving the sliced garlic, mirepoix, etc. in has been a challenge. I'm going to have to get a neighbor to put it in the fridge for me once it cools down.

UPDATE: It came out very tasty. Which is surprising given that I started working and let it cook about 30 minutes longer than it should. But that's what I keep that stock in the freezer for, amirite?
