So this is the result of my scampi efforts! I'd say it's about a C+ in presentation (too much fluid it looks like, even though I followed the recipe exactly!)
I also ended up with kinda rubbery shrimp, but that was expected as I used pre-cooked frozen shrimp. Next time I'll go with raw/frozen-raw, I was just trying to clear freezer space. The sauce was very tasty and I want it for all the things. I was thinking of using the same recipe with chicken for a Chicken Scampi meal sometime.
I served both over pasta (macaroni noodles, again, trying to get rid of stuff).
I think my next effort will be even better! I know I went kinda heavy handed with the parsley, but it was delicious and I regret nothing (except the pre-cooked shrimp of course)!

Sometime this week, I'm going ot be trying to re-create Barleychew's Sausage, Kale and White Bean Awesomeness. I also am going to be making either enchiladas or tostadas with elote this week, if anyone is interested!
