SoI went out to a local farm market to get some Roma tomatoes to make homemade ketchup. When I got there, I discovered that 3 L baskets of tomatoes were $6 each, but a 1/2 bushel was $13. A 1/2 bushel is 17 L according to Google.

I called Mr. I and asked him what he thought, telling him if we got the 1/2 bushel I was going to need his help with the peeling and processing. He said “Go for it!”. So now I have lots and lots of tomatoes.

My plans right now include my ketchup (with roasted red peppers and chipotle), charred tomato and chile salsa, and probably some stewed tomatoes, as I use a lot of canned tomatoes in cooking anyways. Maybe dry some as well.

Anyone have any awesome suggestions for preserving tomatoes?
