Shark Week started today, and I'm in that phase where I'm both starving and feeling sick to my stomach (does that happen to anyone else? It's the worst).

So, of course, I had to bust out my favorite "sick" foods: jook or Chinese porridge! It's basically my version of chicken noodle soup.

It's the perfect food for me: delicious, filling, suuuper customizable, cheap, and so simple it's ridiculous. Basically a can of creamed corn, a can of kernel corn, chicken broth (or vegetable stock), chicken (in this case, I used fish because that's all I had), and of course, rice. Throw rice, broth, water, and chicken in a pot, season lightly, and let boil until rice is cooked (basically, you should use more liquid than you would for normal rice, because you want it to be porridge-y). Throw in corn, let it heat up, then stir in an egg and voila! One pot meal. I like to season it less initially, then when I'm ready to eat, drizzle a little soy sauce and a teeny bit of sesame oil, top with green onions, stir and NOM. A little salty, a little sweet, not too rich but so satisfying...

(When I'm not sick, I add more things, namely vegetables. Super easy to eliminate the meat as well for vegetarian, even vegan, option.)

Right now, I'm eating it while wrapped up in my favorite fuzzy blanket and watching Doctor Who, and I feel so spoiled and cozy. haha
