I was looking at foodporn on tastespotting.com (I can’t link, either... grrr...) which I absolutely love, and found this strawberry salad wrap. A couple of cups of ripped up romaine, iceberg, and whatever that lettuce is in my garden, a couple handfuls of strawberries cut in eighths, a seedless cucumber cut in small chunks, 2-3oz of small cubes (very small, like 1cm) of a semi-sharp goat cheese, a handful and a half of dried cranberries, and small chunks of boneless, skinless chicken thighs pan fried in coconut oil with salt and pepper.
In a jar with a lid combine about a Tbs of balsamic vinegar, a Tbs of olive oil, some fresh ground black pepper, and a hearty pinch of dried tarragon (or fresh, I suppose).
Toss the lettuce, cucumbers and strawberries together, and put in bowls, then top each bowl with a small amount of each of the other toppings. Shake up the jar of vinaigrette and drizzle a little over each bowl. Devour, and then have seconds.
All but my pickiest kid loved it. Which is good, because I made an enormous amount of the lettuce/strawberry/cucumber mix. I know what I’m having for lunch tomorrow!
