My mother made meat stuffing tonight. It is a magical combination of ground beef and ground pork, potato, onion, and spices like cinnamon, nutmeg, and clove. Along with mashed potatoes, my absolute favorite food of all time, it was like the holidays in a bowl.

Meat stuffing is like a precious resource to my family. It is a staple of our holiday dinners. My boyfriend has been turned into a convert, lining up with the rest of the family to get a spoonful or two of the deliciousness. It also represents my mémère, as this was her recipe. Though I highly suspect that she got this recipe from her mother. In any case, it was handed down to my own mother, who is entrusted with bringing the meat stuffing (and pies, she always bakes the pies) to our holiday gatherings. My own grandma didn't want to make it, I think. Or my mother makes it better, I'm not sure. I've only known my mother's meat stuffing.
