Probably not the best thing for me to have on my mind since I had a stomach bug and called in sick today. But I am curious: where do you stand on washing vs not washing?
Frankly, I’m surprised people are still washing their chicken. Brine it, sure, but rinsing it off is pointless and causes more trouble than it’s worth. Just put it on several paper towels and dry off and season and/or marinate before cooking. I had an ex who was horrified that I didn’t rinse it off before cooking and proceeded to do it himself. I spent a fair amount of time disinfecting my entire kitchen after that.
