Made this for dinner tonight. It was lovely, only I think there's a typo on the temperature. It said 300 F for 90 minutes, but it took a lot longer than that. I popped it up to 350 and put it in for another 50 minutes.

I found the spinach and tomatoes made a nice change from your typical roast veggies.
