This is my go to recipe for "we need a lot of food for not a lot of money" type weeks.

It's the bomb. Warning: This was adapted from Guy Fieri recipe (ugh). But I will transcribe what I do. It seems like a lot of steps, and honestly it's mostly prep work, but it's so good. I love when I can get everything into one pot and clean the kitchen and have dinner with no dirty dishes!

Ingredients:

2 packages of ground turkey

1 red bell pepper (chopped)

1 green bell pepper (chopped)

2 large red onions (chopped)

4 pasilla chilis (roasted on open stove top, peeled skin, seeded, and chopped)

1 jalapeno (seeded and minced)

8-9 cloves of garlic (minced)

1 cup chicken broth

3 cups tomato sauce

2 teaspoons granulated garlic

3 tablespoons chili powder

2 tablespoons paprika

1 tablespoon ground cumin
2 teaspoons cayenne pepper
2 tablespoons Kosher salt

2 teaspoons black pepper

1 small can black beans

1 small can pinto beans

1 small can kidney beans

Olive oil

Steps:

Chop all ingredients that need chopping.

Meanwhile, roast the pasilla chilis on the stove, til black. Run under some water and peel the charred skin off. Chop em up!

Heat up some oil.

Add veggies and garlic to the pot.

Cook until starting to become translucent.

Add turkey.

Cook with veggies until no longer pink. 5 minutes maybe?

Add tomato sauce and chicken broth. Stir.

Add all spices, salt and pepper. Stir.

Add beans. Stir.

Let simmer at least an hour.

EAT!

It's even better the next day. Yes, I'm eating it with a big piece of buttered sourdough toast. Yes, it last for days! DAYS!!!
