I am going to make this veggie couscous recipe for dinner.
But the problem is, I have no zucchini. I thought of substituting in eggplant instead, but does eggplant take longer to cook than zucchini? The recipe says to put the bell peppers in to saute before the zucchini, but should I reverse the order if I'm using eggplant?
Note: I'm not going to go buy anything for the recipe because I am cooking this at the house where I nanny so I'm just using what they have. Thanks in advance!
