Don't tell my in-laws, but I ate vegetarian tonight, and it was delicious. It's not that I'm against vegetarianism, or that I'm a picky eater. I absolutely am not (those at the Twin Cities meetup are witnesses). It's that I don't think bread, potatoes, lettuce, and Tofurkey make for a very well-rounded diet. Also, FUCK Fakin' Bacon. That shit ain't right.

I looked in the kitchen cabinet this morning and for whatever reason, the olive oil and balsamic vinegar called out to me. I like to sauté baby portobellos in olive oil and balsamic, so the vinegar becomes a glaze for the mushrooms. Mr. Waffle had trimmed his rosemary plants over the weekend because he's grooming them into bonsai, so we had a bowlful of beautifully fragrant rosemary waiting to be used. Thanks to one Violet Baudelaire, I developed a sudden and intense craving for roasted potatoes with rosemary and garlic. I texted Mr. Waffle my list of demands and told him to pick up a steak for himself. I would never thrust my vegetarian ideals on him.

I marinated the mushrooms and Mr. Waffle dried his steak. I mixed up the potatoes and roasted them for 45 minutes, then the hubs cooked the steak. I cooked the mushrooms after the steak in the cast iron skillet. The meal was DELICIOUS, and relatively quick and easy. To celebrate our awesomeness, we finished with a piece of red velvet cake, which wasn't on the shopping list, but is one of the reasons I love him so much. :)
