What’s everyone cooking and eating this weekend?
I was at a restaurant last week which had a kale salad with a pistachio vinaigrette. It was sooo good so I am recreating it as best I can.
Vinaigrette with crushed pistachios, sherry vinegar, olive oil, and meyer lemon juice.
Chopped kale and red cabbage. Finely chopped apple.
Mix all together and add salt and pepper to taste.
I’m thinking of adding some cannellini beans or butter beans next time.
