What's everybody having for dinner tonight? I'm trying out a recipe I've never tried before, buffalo mac and cheese. It is currently in the oven baking, and I can't wait to try it. I basically used this recipe. But, instead of rotisserie chicken I baked some boneless skinless chicken thighs, I didn't have pepper jack cheese so I used half cheddar half gruyere, and instead of sour cream I used bleu cheese dressing. The cheese sauce was maybe a little grainy when I poured it over the top, but I figure after 30 minutes in the oven it should be pretty good.
ETA: MAKE THIS! YOU WILL NOT REGRET IT!!!! Strangely, I think it would better without the chicken.
On a slightly related note, I opened a bottle of wine I bought a while ago. It was supposed to be a semi-sweet pumpkin wine. If that is their definition of semi-sweet, I don't even want to know what a sweet wine is. This was somewhere around a moscato. I hope my friends like it, because I just can't drink it. So, I just opened up a bottle of F-Bomb. It's a reisling, so still a little sweeter than what I wanted tonight, but I'd rather drink it than leave my house and drive on the ice skating rink we are calling streets.
