Mostly I am starting this to brag about the amazing dinner I just made. I use plated, and this was tonight’s dinner - an asian quinoa bowl with chickpeas, greens and - the piece de resistance - quinoa cooked in coconut milk. Boy howdy - that was some freaking delicious quinoa! I had to add water to it and microwave it because it just wasn’t getting tender - but it was amazing. I didn’t end up using the peanut sauce because everything was so flavorful on its own.
