I made some shredded barbecue chicken in the crockpot this afternoon, I'm gonna serve it up in some low carb tortillas with chopped onion and habanero-jack cheese. :) Baked sweet potato and sauteed bell peppers on the side. I am upping my carb intake slightly, to around 50 or 60 grams a day to see if my mood improves some. Also I may have a coke zero and some rum just because, it's been a rough few days and everyone deserves a midweek cocktail from time to time.
