Last night, while we waited for Husband to get off of work (I finally picked him up at 3am, 4 hours after his shift was supposed to be over), Other-Husband created a gluten free batter and breading, and we battered and deep fried a huge bag of scallops, and a dozen catfish fillets. What we didn't eat on the spot, I refrigerated with layers of paper towels in between (absorbs the grease so they don't get soggy), and heated in the oven for dinner tonight. OMG. SO. GOOD. Crispy, crunchy, deep-fried, gluten free goodness.


I made a dairy free tartar sauce-ish dip (mayo, Tofutti sour cream, dill relish, and garlic salt) to go with the fish, and made baked potatoes in the microwave while the fish reheated.
