I made pork hock and lentil soup - I was going to make some rice but it tasted so damn good that there was no way I was going to take a chance on adulterating it. I cooked the hocks by themselves while I soaked the lentils (I never used to soak them - I think I picked that up here). Once the hocks were done, I strained them out and removed the bones and dumped them back into the pot and I refrigerated it overnight then scraped the fat off. I put it back on the stove added the beans, more water and shredded carrots then kept adjusting seasonings until it was perfect.

How can you fight that - actually, I was surprised how well it turned out which is what stopped me from trying to put it over rice - adjusting for rice is too much a pain.
