What’s everyone having for dinner? On a complete lark I decided to recreate an etouffee that I had at a local restaurant. I’ve never made etouffee before and it came out great!

I had to swap the crawfish for shrimp, but I cooked the roux for half an hour (!) which felt so wrong but was so so right.
