So... I’m beyond stressed these last few days (family crisis [I know, what’s new?]), and barely have the energy or brain power to cook, so tonight it’s beans and rice. Thank the stars for my rice cooker, so I didn’t have to put any serious effort into making delicious food.
(Sorry for huge picture. Not mine, but basically, this is what it looks like.)
I put in 2 cups of brown rice, 4 cups of water, a can of petite-diced tomatoes with the juice, a can of black beans, some dried minced onion, chile and garlic seasoning, salt, pepper, and paprika. Cover, hit the switch, and go sit down while it cooks!
I wanted to have some meat to go with it/in it, but everything I’ve got is frozen solid, so, it’ll have to do.
