My kids asked what was for dinner and I replied, “Slop in a bowl”, because I really had no idea what to make! It had to be something involving the pound of ground pork that was thawed out, but I had little inspiration.

I ended up making, well, taco-flavoured slop in a bowl. I had a container of leftover roasted, seasoned potatoes, so I browned the pork, diced up the potatoes and tossed them in, added a can of Ro-tel, a can of black beans, a squirt of habenero paste, and a small can of tomato sauce. Added garlic salt, chili powder, smoked paprika, and a packet of taco seasoning, and let that simmer for a bit til the flavours melded.

It turned out pretty good. Spicy, savoury, and filling. Not pretty, but tasty!
