I cooked some black beans Thursday night, and I had intended to make beans and rice. Except I really fucking wanted sauteed potatoes. So instead I am cooking red potatoes with vidalia onions, green peppers, cumin, ancho chile powder, and oregano to eat with my black beans. Definitely an accidentally vegan meal, which is a nice thing to stumble into!
