What's something you've never cooked before

That you always meant to try? Some time this week I'm gonna try to make a genoise, the cake that's leavened with whipped egg whites. Also, if anyone has a recipe for genoise that only uses one egg (a small cake, I know) that would be really helpful. It's a 63 gram egg.
