Why is it always 1:45 in the morning when I get brilliant ideas?

This is why I have insomnia.

I mean, I'm THRILLED with the idea that just strolled into my brain already worked out, and that it gave me an excuse to blast funk and mix up a recipe of breakfast bars (Recipe below).

But for the love of fluffy kittens and ducks, WHY DOES THIS NEVER HAPPEN WHEN I'M READY?

BREAKFAST ENERGY BARS

2 cups of rolled oats

3 ripe bananas

1 cup pistachios

1/2 cup pepitas

1/2 cup shelled sunflower seeds

1/2 package of freeze dried strawberries

1/4 cup raisins

1/4 cup dried pineapple

1 cup nut butter (I only had PB)

1 big tbsp Nutella (+1 for yourself)

2 tsps vanilla

1 tsp coconut oil (or Pam or other oil)

1 large cookie sheet

Directions:

Mix all dry ingredients in a large bowl. In a smaller bowl mash bananas with nut butter, Nutella, and vanilla. Mash all wet ingredient until thoroughly combined. Add wet mixture to dry mixture and fold over with a whisk until all dry ingredients are evenly coated.

Coat cookie sheet with oil and press out the bar mixture to evenly cover the pan. Bake at 350 for 30-40 minutes, depending on your oven's quirks.

Cool fully and cut into bar size of your choice.

Best part: you really can use any seed, nut, nut butter, fruit, binder, flavoring you want, just keep the portions roughly the same.
