Yes, yes, it's another food post. I am watching Jane Eyre as I wash dishes and prepare dinner. We are having Swedish Meatballs over egg noodles, with snap green beans as a side.

I thought I would share my recipe, as it is one passed down from my mom's mom to her, to me. I'm second-generation Swedish, both sets of Grandparents emigrated from Sweden to the US in the early 1900's. While there is other blood in us: German, Dutch, Irish, Scots... the bulk of my blood is Swedish, and I grew up with some very tasty food. Between these meatballs and pepparkaker cookies, I am a plump woman.


So, here are my family's Swedish Meatballs:

  • 1 1/4 lean ground beef
  • 3/4 ground pork
  • one small onion, chopped very fine
  • 2 eggs
  • 1/2 cup breadcrumbs (either plain or seasoned, depending on preference)
  • 1/2 cup milk
  • 1 tbsp salt (or half salt/half seasoned salt, if using plain breadcrumbs)
  • 1 tsp pepper

Start with two large bowls. In one, combine ground beef, ground pork, onion, and the salt and pepper. Set aside. In the other bowl, whisk two eggs, then add the breadcrumbs and the milk, mixing well. Then pour mixture into the meat mixture, and combine well. Cover lightly and put in the fridge to set for 1 1/2 hours. This is important, otherwise the meatballs will not form properly.

Take meat out and roll into balls approx. 1" in diameter. Brown the meatballs in a low pan with some shortening or vegetable oil. Drain lightly. Then add water or beef broth until the meatballs are mostly covered, cover the pan, and lower the heat to simmer for a half-hour.

If you want more gravy, simply add more water or beef broth to the simmering pot. My mom uses beef broth, her mother used just water. I... forgot to buy beef broth, and so will be using water.


Serve over egg noodles, rice, or potatoes. This recipe serves about 4 to 6, depending on whether you inhale them like my family does. It might even serve 8, we always had some leftovers that my dad would take to work in a sandwich. Guess what I plan to do tomorrow? OM NOM NOM.

Edited because I am an idiot and forgot the onion. Which I did when I shopped for this meal, as well. I am terrible at this, I swear. How does anything so tasty come out of my kitchen at all? I swear, it must be fairies.
